Job summary

Fontainebleau Las Vegas is seeking a Steward to maintain the kitchen and surrounding areas, ensuring cleanliness and sanitation across all stations and equipment. You will manage dishwashing, pot washing, and trash disposal while upholding safety and regulatory standards.

The role requires attention to detail, reliability, and the ability to work a flexible schedule including holidays, nights, and weekends. Prior stewarding experience and strong teamwork are advantageous for success.

Qualifications

• High School Diploma required.
• Previous stewarding experience preferred.
• Some experience with inventory controls and procurement processes preferred.
• Ability to complete appropriate safety training and certifications.
• Develop and maintain positive working relationships with other employees and departments.
• Excellent interpersonal and customer service skills.
• Excellent organizational skills; able to work under deadlines.
• Willing and able to work a flexible schedule including holidays, nights, and weekends.

Responsibilities

• Responsible for all aspects of dish washing & pot washing including cleaning and maintaining sanitation of kitchen equipment and other areas assigned.
• Sort and clean dishes, silverware, glasses, utensils, and assorted items.
• Wash pots and pans.
• Clean and sanitize kitchens, kitchen equipment, and work areas (tables, surfaces, kettles, fryers, counters, floors, walls, drains, freezers, etc.).
• Pick up and dispose of trash and cardboard in all kitchens and F&B venues.
• Ensure work area is cleaned, organized, and complies with regulatory standards and codes.
• Operate cleaning equipment and tools (dish machine, pot-scrubbing station, trash compactor).
• Conduct inventory counts and fulfill requisitions as required.
• Follow HMMP procedures for handling and disposing of chemicals and pathogens (SDS).
• Protect company tools, equipment, machines, or other assets per policy.
• Temporary or permanent duties may be added or modified as needed.
