Job summary

PILF Restaurant Group seeks an Assistant Kitchen Manager for Cane Rosso at White Rock in Dallas. You will assist in leading daily kitchen operations, coaching staff, and ensuring safety and sanitary standards.

You will help manage scheduling, food cost, and quality, while upholding PILF's recipes and service standards. This role offers ongoing training, competitive pay, paid vacation, and a quarterly bonus.

Qualifications

• Minimum of 2 years in varied kitchen roles including prep, line cook, fry cook, and expediter; at least 6 months in a leadership/management position.
• Excellent communication skills with all staff and guests.
• Able to work in a fast-paced environment and multi-task.
• Able to stand long periods (up to 9 hours).
• Able to reach, bend, stoop and lift up to 50 pounds.
• Stamina to work 45–50 hours per week.
• Experience with POS, inventory programs, and online ordering.
• Food service sanitation certificate is required.

Responsibilities

• Implements and enforces kitchen policies and procedures.
• Oversees training of new kitchen staff and maintains a positive work environment.
• Ensures safe operation and sanitation of kitchen equipment and facilities.
• Assists with BOH labor scheduling to meet activity and labor-cost goals.
• Complies with all health, safety, and labor regulations.
• Aids in achieving service quality, consistency, and facility appearance targets.
• Maintains cleaning schedules for floors, equipment, and food storage.
• Ensures proper receiving and product rotation per standards.
• Maintains food quality and portion control per PILF recipes.
