Responsibilities
- Prepare all Specialty Cuisine dishes as per client menu specifications and recipes.
- Ensure compliance with quality standards, FDA, HACCP and other regulations.
- Interpret and implement HACCP procedures, including proper temperature controls and completing necessary paperwork.
- Prepare bulk hot food promptly in compliance with kitchen ready times and flight schedules.
- Cook a variety of main courses (sauces, proteins, starches, vegetables) with long preparation times.
- Assume responsibility for quality of meals prepared and comply with airline meal specifications.
- Follow airline client specifications for all food items.
- Assist with menu presentations.
- Determine production levels and prepare requisitions to obtain appropriate supplies and food from storeroom.
- Create sauces from scratch without supervision.
- Understand and complete recipes, following specifications for taste, color, texture, and appearance.
- Inventory supply levels and requisition food products as necessary.
- Prepare food based on a pre‑determined production level.
- Keep kitchen and work areas clean, sanitary, and well‑maintained.
- Maintain proper temperature of all food products.
- Work side by side with the Executive Chef and Production Chef as needed.
- Assume other related duties as required or assigned.
Qualifications
- Three or more years of experience working in a fast‑paced environment.
- Excellent communication skills, both oral and written.
- Ability to work under pressure while maintaining composure.
- Team‑spirited attitude.
- Good working knowledge of airline specifications.
- Flexible with days off and start times as this is a 24‑hour operation.
- Read, speak and write English.
- A minimum of 3–5 years experience in a high volume kitchen.
- Ability to convert to metric measures.
- Ability to use fingers and hands to handle equipment up to 8 hours a day.
- Basic math skills.
- Understanding of HACCP compliance and procedures with proper controls and necessary paperwork/logs.
- Good organizational skills, adaptable to frequent changes.
- Ability to apply safety and sanitation standards.
- Above average skill level with cutlery, small wares, and equipment.
- Prior experience creating sauces from scratch.
- Flexible to work in a 24/7 environment, including nights, weekends and holidays per shift bidding.
- Ability to work around moving parts & wet floors.
- Ability to walk, stoop, bend, stand for entire shift.
- Ability to work in extreme temperature changes and exposure to hot surfaces.
- Capable of active walking, heavy lifting and pushing up to 50+ lbs.
