BEAST Craft BBQ Co. in Belleville, IL is seeking a Catering & Events Manager to lead catering, events, and food truck operations from inquiry to closeout. This salaried role includes sales, planning, staffing, logistics, inventory, vehicle readiness, reporting, and on-site leadership.

This position requires independently managing complex, high-revenue events and collaborating with restaurant leadership to ensure consistent execution and guest satisfaction.

Qualifications

• Minimum 2 years of experience managing catering, events, and/or food truck operations.

Responsibilities

• Lead catering, event, and food truck sales from inquiry through final invoice.
• Plan menus, staffing, timelines, and execution details for each event.
• Oversee on-site and off-site catering, event, and food truck execution.
• Coordinate delivery scheduling to ensure on-time arrival and food quality.
• Recruit, train, schedule, and lead catering staff and drivers.
• Manage inventory, par levels, and orders for events and trucks.
• Produce regular sales and labor reports and track performance against targets.
• Fulfill weekly required hours as a salaried manager and support restaurant ops when needed.
