Job summary

NANA Regional Corporation is seeking a Hotel Cook in Kotzebue, AK to prepare, produce and present a variety of foods and complete production sheets. You will work under supervision to ensure safety, quality, and timely service in a hotel restaurant environment.

The role requires English fluency, FDA-compliant handling, and relevant experience. LODGING industry experience and Deltek Costpoint are preferred; shift flexibility and possible on-call duties apply.

Qualifications

• High school diploma or GED required.
• Food Handler card within 30 days of employment.
• Must be fluent in speaking, reading, and writing English.
• Deltek Costpoint experience preferred.
• Lodging industry experience preferred.
• At least two years of related vocational training; more if lacking training.
• At least three years of related food preparation experience.
• Some positions require a valid Driver’s License and clean driving record.

Responsibilities

• Properly, safely and efficiently prepare food products while following standard food-handling procedures.
• Perform main line food production duties as assigned.
• Review daily needs with supervisors and complete production sheets.
• Assist supervisors with menu and recipe development.
• Ensure quantity, quality, and sanitation in food production.
• Assist in supervision and training of food service personnel.
• Arrange kitchen helpers for smaller item preparation.
• Oversee food serving lines; ensure stock and cleanliness.
• Maintain sanitation and proper organization of work areas.
• Fill in for other food service roles as needed.
• Observe rotation procedures for produce and dairy.
• Maintain equipment and storage areas per sanitation and safety procedures.
• Use proper PPE for tasks.
