Highgate Hotels is seeking a full-time kitchen role focused on preparing all food items across Restaurants, Room Service, Employee Cafeteria and Banquets. You will ensure consistent preparation, maintain sanitation, and support various kitchen stations as needed to meet hotel standards.

The role requires culinary experience, the ability to stand for long periods, and flexibility with hours. Competitive benefits accompany a comprehensive kitchen environment.

Qualifications

• High School diploma or equivalent and/or experience in a hotel or a related field.
• Culinary experience required.
• Flexible and long hours sometimes required.
• Medium work - Exerting up to 50 pounds of force occasionally, and/or 20 pounds of force frequently to lift, carry, push, pull.
• Ability to stand during entire shift.
• Ability to withstand temperature variations both hot and cold.
• Knowledge of menus and the preparation required, according to hotel standards.
• Proficiency in cooking techniques: charbroiling, poaching, deep-frying, sauté, braising, roasting and par-cooking.
• Knowledge of herbs and spices and proper use of each.

Responsabilités

• Maintain cleanliness and organization of all storage areas.
• Complete necessary food and station preparation prior to the opening of the restaurant to ensure guests are served promptly.
• Prepare and display buffet food items according to hotel standards.
• Recognize quality standards in fresh vegetables, fish, dairy and meat products.
• Maintain clean and sanitary kitchen environment and safe handling of foods.
• Prepare food for Banquets and Employee Cafeteria as specified.
• Follow hotel recipes and Chef guidance; assist other kitchen stations as needed.
• Breakdown buffets and kitchen line; store food and equipment properly.
• Work banquet food stations as scheduled by the Chef.
