Job summary

Oldfield Club in Okatie, SC, is seeking a full-time Beverage Manager to lead and elevate the Club's beverage program, ensuring exceptional hospitality across the Rookery Bar, Magnolia Room, and River Club. The role emphasizes leadership, cost control, and a guest-centric approach to wine, cocktails, and service.

The ideal candidate manages beverage operations, coaches staff, collaborates on events, and drives profitable, memorable member experiences in a dynamic hospitality environment.

Qualifications

• Minimum of 3-5 years of progressive beverage, bar, restaurant, hotel, resort, or private club management experience.
• Strong knowledge of wine, spirits, beer, cocktails, and current beverage trends.
• Experience managing beverage cost, inventory, purchasing, and pricing.
• Experience leading and developing a service team.
• Excellent communication and interpersonal skills.
• Strong organizational and time-management abilities.
• Comfortable working in a high-touch hospitality environment.
• Proficiency with POS systems, inventory systems, Microsoft Office, and related technology.

Responsibilities

• Lead the day-to-day beverage operations throughout the Club.
• Manage the Wine Club program.
• Establish and maintain high standards for beverage quality, presentation, service, and hospitality.
• Develop and maintain beverage menus for multiple outlets and events.
• Create seasonal and signature cocktail programs reflecting current trends.
• Oversee wine program: selections, pricing, inventory, presentation, staff education.
• Develop beverage experiences, tastings, pairings, member events, and other programming.
• Ensure offerings complement culinary program and overall Club experience.
• Maintain awareness of emerging beverage trends and introduce concepts.
• Manage beverage purchasing, receiving, storage, organization, and inventory.
• Monitor beverage cost, pricing, margins, waste, breakage, and variance.
• Establish beverage pricing with Director of Food and Beverage.
• Conduct regular inventory counts and investigate discrepancies.
• Build relationships with distributors, suppliers, and representatives.
• Ensure beverage areas are clean, stocked, and presented.
• Develop and maintain beverage standards, recipes, and procedures.
• Ensure compliance with SC alcohol laws and Club policies.
• Recruit, train, coach, and develop staff.
