Job description

We are currently seeking a passionate and highly skilled Head Baker to lead our dedicated bakery team at Tuga Pastries. Our focus is on maintaining exceptional quality and consistency in all our products, alongside fostering a positive and collaborative team culture. In this crucial role, you will ensure that all our pastries and cakes are prepared with meticulous care and in strict adherence to our established recipes and NSW hygiene standards.

As the Head Baker, you will have full responsibility for overseeing all aspects of our bakery operations. This encompasses everything from the hands-on baking of our delectable pastries and cakes to efficient kitchen management and providing strong leadership to our team of bakers. Your primary objectives will be to consistently produce outstanding products, drive operational efficiency within the bakery, and inspire and develop the skills of your team.

This is a hands-on, leadership-focused position requiring a commitment of 5 days a week, including one day on the weekend. It is an ideal opportunity for a chef who possesses both strong technical baking skills and sound business acumen.

Key Responsibilities

  • Fostering a culture of problem solving through leading by example and education of team members.
  • Streamlining operations where possible.
  • Supporting the executive team with menu preparation and creation for the range of Tuga dine-in and takeaway options.
  • Providing guidance and training to the team of junior chefs and kitchen assistants within the section.
  • Assisting in writing and publishing rosters.
  • Providing daily reports to the executive team on the operations of the kitchen, including issues such as maintenance, product feedback, etc.
  • Communicating section updates to other teams and the executive team regularly.
  • Collaborating with the culinary team to ensure high-quality food and service.
  • Preparing sandwiches and mise-en-place for restaurant/cafe menu.
  • Optimizing cooking processes with attention to speed and quality.
  • Enforcing strict health and hygiene standards.
  • Placing orders with suppliers and Tuga Pastries' main production kitchen.
  • Assisting in administrative duties as delegated by the manager to ensure smooth kitchen operations.

Essential Knowledge and Experience

  • Ideally Cert IV in Commercial Cookery or equivalent.
  • Minimum 5 years of comparable work experience.
  • Ability to multitask and work efficiently under pressure.
  • Can-do attitude and willingness to work as part of a team.
  • Good understanding of food cost control, inventory management, and kitchen operations.
  • Strong knowledge of WHS regulations and best practices.
