POSITION OVERVIEW

We are looking for a true baking and pastry professional to join our team of artisan bakers. As a Head Baker at Ole & Steen you will oversee creation of real Danish bread and pastries. You will produce artisan Danish breads, rolls, and laminated dough as a part of an enthusiastic and international team. The ideal candidate must be enthusiastic about baking, love long fermentation times, and enjoy working as a team. You must enforce health and safety standards. The goal is to enhance customer and employee satisfaction so that we can maintain and expand our clientele and you must expect to produce a high volume of products for our stores. This role is ideal for someone who is interested in learning about our Danish heritage and able to manage the daily operation of a bakery.

RESPONSIBILITIES
  1. Oversee daily production of breads, ryes, rolls, and pastries according to our traditional Danish recipes
  2. Observe and maintain the quality of products being baked, and adjust oven temperatures, baking time accordingly
  3. Management of a team of up to 6 – handling daily scheduling
  4. Management of bakery, including organization and cleanliness of dried storage and fridges
  5. Measuring and combining ingredients and using mixers, heat sources, and other equipment
  6. Checking-in and accepting deliveries from our purveyors
  7. Follow portion standards
  8. Monitor inventory of ingredients for production
  9. Properly label and store ingredients
  10. Check equipment to ensure that it meets health and safety regulations
  11. Maintain a clean and orderly bake shop and adhere to health and safety standards
QUALIFICATIONS & REQUIREMENTS
  1. Completion of a Culinary School program or apprenticeship preferred
  2. Positive and problem-solving attitude
  3. A genuine passion and knowledge for bread
  4. Dependable and hard-working
  5. 2-4 years of professional baking experience preferred. Experience with Danish or Scandinavian baking methods is a huge plus!
  6. Experience with mixing, bench work, proofing, and baking bread as well as working with laminated doughs for our breakfast pastry production
  7. Ability to work overnight, weekends, and some holidays
  8. Able to lift 50+lbs without restrictions
  9. The ability to stand and/or bend for extended periods of time to perform essential job functions
  10. Basic math skills
  11. Highly honed sense or urgency
  12. Excellent time management skills
  13. Thoroughly follow company procedures according to health and safety standards
  14. Adhere to all food safety regulations and procedures

Ole & Steen was founded in 1991 by the Danish bakers Ole Kristoffersen and Steen Skallebæk and originally called Lagkagehuset or “The Layer Cake House”. Ole & Steen is a pioneer in the resurgence of artisanal and handcrafted baking practices in Denmark. In 2008 the two bakers joined forces and became the organization we know today. We have been Denmark’s favorite bakery for more than 30 years, serving delicious Danish breads, pastries, cakes, single estate coffee and food. We opened our first bakery on Union Square in 2019 to huge acclaim and fantastic reviews and we’re continuing our exciting growth journey – we currently operate 5 retail stores across NYC, and we have plans to grow and expand over the coming years!
