Job summary

Viceroy Hotels invites applications for a Cook position at Hyatt Centric Santa Monica. The role prepares all food items per standardized recipes for Restaurants, Room Service, Employee Cafeteria and Banquets, ensuring top quality and cost efficiency.

The candidate will maintain kitchen cleanliness, safety, and sanitation, and may assist other kitchen stations as needed, with flexible hours and strong culinary skills.

Qualifications

• High School diploma or equivalent; hotel experience preferred.
• Culinary experience required.
• Flexible and long hours may be required.
• Medium work - up to 50 lbs; stand during shift.
• Thorough knowledge of menus and hotel prep standards.
• Proficiency in charbroiling, poaching, deep-frying, sauté, braising, roasting and par-cooking.
• Knowledge of herbs and spices and proper use.

Responsibilities

• Maintain cleanliness and organization of storage areas.
• Prepare and station prep before opening to serve guests promptly.
• Prepare and display buffet items according to hotel standards.
• Recognize quality standards in fresh vegetables, fish, dairy, and meat.
• Maintain a clean, sanitary kitchen environment and proper handling.
• Prepare food for Banquets and Employee Cafeteria as required.
• Follow hotel standard recipes; assist in other kitchen positions as needed.
• Breakdown buffets and kitchen line; store food and equipment properly.
• Support kitchen staff for any position in need of help.
• Follow Health Department and Company regulations for food safety.
