• Marination process: mix marination ingredients, add salt, water and ice, and schedule draining times.
• Fryer designation for food safety: manage loads, cook times and stirring intervals.
• Filter maintenance: sift flour before/after loads and change filters regularly.
• Grease/side fryer management: change side fryers after lunch and dinner Rushes.
• Product marination: marinate tenders, chicken, livers/gizzards and fish.
• Batter process: prepare batter with batter mix and cold water; monitor and change as needed.
