Buck & Rider, a Hi Noon Hospitality concept in Phoenix, is seeking a skilled fishmonger to join our seafood team. You will receive and inspect deliveries, break down whole fish to company standards, portion seafood for restaurants and the retail case, and ensure accurate labeling.

You’ll maintain cold storage, track yield and waste, assist guests at the counter, uphold strict food safety, and collaborate with chefs to meet daily service needs. Flexibility for evenings and weekends is valued.

Formación

• Experience as fishmonger/seafood butcher in a high-volume seafood environment.
• Knowledge of whole fish breakdown, shellfish handling and seafood quality identification.
• Ability to follow company standards, keep cuts & portions consistent, work in a fast-paced environment.
• Flexible availability including evenings, weekends & holidays; valid Food Handler card or able to obtain one.
• Able to stand for extended periods, in a cold environment; lift up to 50 lbs; accommodations available.

Responsabilidades

• Receive and inspect fresh seafood deliveries to ensure quality, freshness, and proper temperature control.
• Break down whole fish and seafood to company standards; portion for restaurants and retail case.
• Track yield and waste to keep cuts efficient and costs in line.
• Pack and label restaurant orders accurately and on time for delivery to kitchens.
• Keep the case full and presentable; assist guests with selections.
• Maintain cleanliness and organization in fish cutting and storage areas.
• Ensure proper labeling, rotation, and storage of all seafood products.
• Complete accurate inventory counts and help maintain product levels for shop and restaurants.
• Uphold food safety standards including proper temperatures, sanitation and safety guidelines.
• Collaborate with chefs and team members to support daily service.
