Job summary

HNH MANAGEMENT LLC is seeking a Fish Monger in Phoenix to receive, inspect, and break down fresh seafood for our restaurants and retail case. You will maintain freshness, portioning accuracy, and assist guests with recommendations in a busy shop environment.

The role requires experience as a fishmonger or seafood butcher, knowledge of quality seafood handling, and the ability to work evenings and weekends in a cold environment. Training and development opportunities are available.

Qualifications

• Prior experience as a fishmonger or seafood butcher in a high-volume environment.
• Strong knowledge of whole fish breakdown, shellfish handling and seafood quality.
• Ability to follow standards and work collaboratively in a fast-paced setting.

Responsibilities

• Receive and inspect fresh seafood deliveries for quality and temperature.
• Break down fish: scale, fillet, trim, debone, portion per standards.
• Track yield and waste to control costs and efficiency.
• Label and pack restaurant orders and keep cases stocked and tidy.
• Assist guests at the counter with recommendations and maintain cleanliness.
