Job summary

FastTrax Entertainment is seeking an Expo (Food Expeditor) in Fort Myers, FL to act as the critical link between kitchen and service staff. You will oversee the expo window, verify order accuracy, and coordinate with cooks, runners, servers, and managers to ensure timely, correct dishes are delivered.

This fast-paced role requires sharp communication, organization, and attention to detail, with flexibility to handle high-volume service, allergy notices, and special requests across dining areas

Responsibilities

• Manage the kitchen pass-through and expo window during service.
• Coordinate the timing and completion of food orders to ensure all items for a ticket are ready together whenever possible.
• Review all outgoing orders for accuracy, portioning, presentation, temperature, and overall quality.
• Verify that orders include the correct sides, sauces, garnishes, modifications, and special requests.
• Communicate clearly and professionally with cooks, food runners, servers, bartenders, and managers.
• Organize and prioritize tickets during high-volume periods to maintain an efficient flow of orders.
• Monitor ticket times and communicate delays or issues to the appropriate team members.
• Ensure food runners and servers receive the correct orders and understand where each order should be delivered.
• Assist with basic garnishing, plating, finishing, and packaging of food orders when needed.
• Pay close attention to allergy notifications, dietary requests, and special order modifications.
• Maintain a clean, organized, and sanitary expo station and service window throughout the shift.
• Keep necessary supplies stocked and ready for service.
• Assist with communication between kitchen and front-of-house regarding unavailable items or delays.
• Support special events and high-volume functions as needed.
• Assist with opening, closing, cleaning, and restocking responsibilities as assigned.
• Follow all food safety, sanitation, cleanliness, and safety standards.
