Job Description

As a senior department head, this role strives to continually improve guest and colleague satisfaction and maximize the financial performance in the F&B Division overall.

Manage all F&B outlets/banquet/bar operations and colleagues daily. Areas of responsibility include Amaya Restaurant, Lobby Bar, IRD, Pool, Cent'Anni, Clubhouse Grill, and banquet functions. As a department head, direct and collaborate with the food and beverage/culinary management team and colleagues to successfully execute all operations. Focus on enhancing guest and employee satisfaction and maximizing financial performance in your areas of responsibility.

  • Set goals and develop strategies to achieve them.
  • Forecast and schedule using hotel tools and guidelines.
  • Oversee training for all new and current food and beverage service employees, conducting regular training sessions for management and staff.
  • Maintain standards of performance, conduct, dress code, appearance, sanitation, etc., according to policies.
  • Implement performance improvements and foster teamwork.
  • Review performance annually.
  • Develop analyses and implement merchandising strategies aligned with the hotel's profile and guest patronage. Manage expenses focusing on revenue and profit.
  • Ensure comprehensive knowledge of menu items, ingredients, and beverage programs.
  • Collaborate with culinary team to ensure quality and guest satisfaction.
  • Participate in departmental meetings and stay informed of special events.
  • Review departmental logs daily.
  • Manage POS system and control waste.
  • Maintain inventories and par stocks.
  • Ensure equipment is in working order and report deficiencies.
  • Manage beverage stock, wine, and cocktail lists.
  • Possess working knowledge of Profit and Loss statements and control beverage costs.
  • Handle guest complaints effectively and develop service techniques for maximum satisfaction.
  • Maintain current prices and vendor relationships based on quality and cost.
  • Train staff and develop procedures to improve guest patronage.
  • Maintain effective communication across departments.
  • Respond appropriately to emergencies and safety situations.
  • Perform other tasks as assigned.

Role Expectations

  • Training and coaching colleagues on the floor.
  • Ensuring adherence to standards and sequences.
  • Meeting Forbes and LQA standards.
  • Supporting during busy periods to ensure guest satisfaction.
  • Managing guest expectations and resolving issues.
  • Shift rotations including evenings, weekends, and late nights.

Ideal Candidate Qualities

  • Strong leadership and interpersonal skills.
  • Proficiency in MS Excel, Word, & PowerPoint.
  • Professional appearance and grooming.
  • Excellent English language skills.
  • College degree in hotel/restaurant management or related field preferred.
  • Minimum five years of restaurant management experience at a department head level.
  • Food Handler Certification required.
