Job Description

The Food and Beverage Manager is responsible for the daily operation of the restaurant and bar, directing the F&B team to ensure customer satisfaction and managing the business to ensure profitability. The F&B Manager manages food and beverage costs, upholds menu standards, and controls inventory.

Carry out Duty Management shifts according to DM ROTA and business needs.

1. Attend and actively participate in weekly Head of Department meetings, respecting confidentiality.
2. Ensure your department conforms to all Health & Safety requirements.
3. Manage staffing and rotas within the department.
4. Ensure all statutory training is completed.
5. Responsible for all HR aspects of the department including recruitment.
6. Manage the service of food and beverage within various outlets and areas.
7. Ensure cleaning and maintenance of outlets, work areas, and equipment.
8. Coordinate with Conference Office for conference preparations.
9. Prepare monthly reports on key performance indicators and actions taken.
10. Manage and guide all F&B staff, including team members and leaders.
11. Report on stock control daily, weekly, and monthly, adhering to targets and forecasts.
12. Prepare weekly and monthly forecasts for all F&B areas.
13. Liaise with Conference Sales Manager and Conference Coordinator.
14. Follow Emergency Communication procedures and media response protocols.
15. Implement the Accor Vision and demonstrate active use of Accor Values.
16. Perform any other duties assigned by your manager.
17. Operate within liquor licensing guidelines and House Management Policies.
