Job summary

Sunset Key Cottages is seeking an Executive Sous Chef to lead Latitudes' culinary team on Key West’s private island. The role focuses on leadership, creativity, and precision, mentoring kitchen staff and driving consistent, high-quality offerings across all menus.

The ideal candidate possesses at least two years in a comparable role, a passion for culinary excellence, and a steadfast commitment to hospitality standards.

Qualifications

• Minimum two years in a comparable role is implied but not stated; leadership experience is essential.
• Must be able to work long hours, weekends, evenings and holidays.
• High standard of cleanliness and strong food safety practices.
• Clear and concise verbal and written communication, including emails.

Responsibilities

• Sets up and executes hot food for restaurant.
• Sets up and executes breakfast hot food for banquet events.
• Manages all sous chefs, line cooks, production cooks, breakfast buffet attendants and stewards.
• Trains and mentors all sous chefs and hourly staff.
• Addresses kitchen-related problems promptly and effectively.
• Completes opening, daily, and weekly checklists.
• Follows state health codes and company SOPs.
• Ensures health and safety standards are upheld.
• Works with culinary management on product quality and multi-tasking.
• Manages daily vendor orders and keeps coolers/ storerooms organized.
• Sets up, maintains operations, and breaks down stations.
• Plans and prepares special occasion menus including holidays.
• Develops plating designs for new dishes.
