Job Description: Executive Sous Chef at COQODAQ

The Executive Sous Chef assists the Chef de Cuisine (CDC) and Executive Chef in leading all back-of-house (BOH) team members to operate efficiently and profitably. Responsibilities include managing menu planning, operations, recipes, financials, inventory, food quality, and staff supervision. The role requires providing leadership and hands-on training to kitchen staff, ensuring safety, sanitation, and fostering a positive work environment.

Essential Job Duties & Responsibilities
Culinary:
  • Develop and implement culinary standards under the CDC's guidance.
  • Oversee ingredient stock, ordering, and purchasing, ensuring freshness and minimizing waste.
  • Manage kitchen operations, ensuring safe, efficient, and specification-compliant food preparation.
  • Establish and conduct line checks for DOH compliance multiple times daily, addressing violations immediately.
  • Create and update menus based on trends, costs, and seasonal ingredients; develop specials for holidays and events.
  • Lead weekly chef meetings, propose new ideas, and build vendor relationships for quality ingredients.
Hospitality:
  • Promote COQODAQ’s values of excellence in food, beverage, service, and hospitality.
  • Lead service, actively participating in expedites and kitchen stations during service.
  • Build positive customer relationships and address service needs collaboratively with the Chef De Cuisine and General Manager.
Finance:
  • Maximize profitability through effective food and labor cost controls, monitoring budgets, and reporting discrepancies.
  • Regularly cost recipes and oversee purchasing to ensure cost targets are met.
  • Manage vendor relationships, establish order guides, and oversee inventory accuracy.
  • Implement waste tracking and maintain financial reporting accuracy.
  • Ensure proper team coverage, review time punches, and address payroll issues.
Operations:
  • Maintain impeccable cleanliness in all kitchen areas.
  • Oversee daily restaurant administration including payroll, station assignments, and safety compliance.
  • Manage staff responsibilities, scheduling, and vendor relations.
  • Establish accountability systems, provide feedback, and conduct safety and service training.
  • Participate in community events and uphold corporate social responsibility.

NY State’s Pay Transparency Law: Salary range is $80,000 - $85,000 USD.
