Description

The Executive Sous Chef (ESC) manages daily BOH operations at LPHG’s Chelsea Market location. This hands-on leader works with the Executive Chef to ensure kitchen efficiency, staff training, performance management, and culinary excellence, maintaining LPHG’s standards of quality and innovation.

Position Summary

The ESC develops culinary talent, ensures consistent food execution, and optimizes kitchen operations, serving as a key link between daily kitchen activities and strategic objectives.

Key Responsibilities

  1. Leadership & Team Development
    • Lead daily kitchen operations, ensuring quality, consistency, and efficiency.
    • Mentor and coach BOH staff, fostering growth and accountability.
    • Assist in performance evaluations, providing feedback and participating in delivery.
  2. Staff Management & Training
    • Collaborate on recruitment, interviews, hiring, and onboarding.
    • Train new hires, ensuring proficiency and standardized recipe execution.
    • Participate in training BOH managers for leadership readiness.
    • Collaborate on training FOH staff on F&B offerings.
  3. Culinary Operations & Execution
    • Manage BOH staff schedules and communicate with the Executive Chef & Payroll team.
    • Expedite service during peak hours.
    • Contribute to menu development, tastings, and implementation.
    • Ensure seamless communication with FOH.
    • Monitor workflows and equipment, resolving issues proactively.
    • Oversee equipment maintenance and repairs.
  4. Inventory & Cost Management
    • Oversee inventory, ordering, and vendor relations.
    • Manage inventory levels and collaborate on cost optimization.
    • Identify cost-saving opportunities while maintaining quality.

Qualifications

  • 5+ years of BOH leadership in a high-volume environment.
  • Strong leadership, coaching, and talent development skills.
  • Experience in inventory management, cost control, and vendor negotiations.
  • Knowledge of food safety and sanitation regulations.
  • Ability to multitask and prioritize effectively.
  • Excellent problem-solving and communication skills.

Pay & Benefits
