Congress Hall Hotel in Cape May, NJ is seeking an Executive Sous Chef to lead all culinary outlets. This role supervises and coaches area Sous Chefs, Lead Cooks, Line Cooks, Prep Cooks and Stewarding Staff, and ensures standardized recipes, training, and efficient production.

The Executive Sous Chef reports to the Executive Chef and may cover multiple stations, including events, with a focus on Farm to Table ingredients from our own farm and seasonal menus.

Qualifikationen

• High school diploma or equivalent.
• Minimum three years kitchen supervisory experience.
• Minimum five years professional kitchen experience.
• Farm to table experience preferred.
• Culinary degree preferred.
• Knowledge of classical cooking techniques.
• Proficient in Word and Excel.
• Strong math for recipes and costs.

Aufgaben

• Oversee daily operation of culinary outlets.
• Supervise and coach Sous Chefs and cooks.
• Develop standardized recipes and costings.
• Train kitchen staff and conduct line checks.
• Ensure cleanliness and organization of kitchen.
• Manage high-volume production up to 1500+ covers per day.
• Participate in menu development and holiday planning.
