Job summary

Chartwells Higher Education in Charleston, SC is seeking an Executive Chef to oversee kitchen operations and ensure safety and sanitation standards are met. You will direct meal preparation in line with corporate programs and guidelines, and lead a team of culinary professionals in a high-volume setting at The Citadel.

Qualifications

• A.S. or equivalent experience required.
• 3–5 years of progressive culinary/kitchen management experience.
• Extensive catering experience a plus.
• High volume, complex foodservice operations experience desirable.
• Hands-on chef experience required.
• ServSafe certification highly desirable.
• Proficiency with Microsoft Office (Word, Excel, PowerPoint, Outlook).

Responsibilities

• Plans regular and modified menus according to established guidelines.
• Follows standardized recipes, portioning and presentation standards; uses daily production worksheets and waste logs.
• Trains kitchen staff in food preparation, safety and sanitation per standards.
• Maintains cleaning and maintenance schedules for equipment and areas.
• Maintains inventory and ensures product availability within guidelines.
• Decides on utilization of leftover foods within guidelines.
• Ensures compliance with health, safety and sanitation regulations.
• Participates in departmental meetings and staff development.
