Chartwells Higher Education is hiring an Executive Chef for The Citadel in Charleston, SC. You will oversee kitchen operations, ensure safety and sanitation, and direct meal preparation in line with corporate programs. This is an energetic, entrepreneurial culinary leadership opportunity.

The role requires hands-on leadership, catering experience, and strong knowledge of food trends, production, and cost controls. Excellent team collaboration and compliance with standards are essential.

Qualifications

• A.S. or equivalent experience.
• 3–5 years of progressive culinary/kitchen management experience.
• Extensive catering experience is a plus.
• High volume, complex foodservice operations experience preferred.
• Hands-on chef experience required.
• Knowledge of food and catering trends with emphasis on quality, production, sanitation, and cost controls.
• ServSafe certification is desirable.

Responsibilities

• Plans regular and modified menus per guidelines.
• Follows recipes, portions, and presentation standards; uses production worksheets and waste logs.
• Trains kitchen staff in food preparation, safety, and sanitation per standards.
• Establishes cleaning and maintenance schedules for equipment and areas.
• Maintains inventory within guidelines while ensuring product availability.
• Decides on leftover food utilization within guidelines.
• Complies with health, safety, and sanitation regulations; supports audits.
• Participates in departmental meetings and staff development.
