Qualifications

• A.S. or equivalent experience required.
• 5+ years of progressive culinary/kitchen management experience.
• Experience in high-volume, complex foodservice operations.
• Hands-on chef experience essential.
• Knowledge of food & catering trends; focus on quality, production, sanitation, and presentation.
• Experience with Microsoft Office (Word, Excel, PowerPoint, Outlook, Internet).
• ServSafe certification is highly desirable.

Responsibilities

• Plans regular and modified menus per guidelines.
• Follows recipes, portions, presentation; uses production worksheets & waste logs; tastes meals for quality.
• Trains kitchen staff on food prep, safety, equipment use, sanitation per standards.
• Maintains cleaning and maintenance schedules for equipment and areas; ensures schedules are followed.
• Maintains inventory to ensure product availability within guidelines.
• Decides on leftover food utilization per company guidelines.
• Complies with health and sanitation regulations and audits.
• Follows safety policies; participates in meetings and ongoing development.
