Compass Healthcare in Madison, WI is seeking an Executive Chef to oversee kitchen operations, ensure safety and sanitation, and guide menu development in line with corporate programs.

You will lead a culinary team, manage high-volume production, and uphold quality and cost controls while maintaining compliance with health regulations.

Qualifications

• A.S. or equivalent experience.
• 2+ items: progressive culinary/kitchen management experience.
• Extensive catering experience is a plus.
• Experience in high-volume, complex foodservice operations is highly desirable.
• Institutional & batch cooking experience.
• Hands-on chef experience is a must.
• Knowledge of food and catering trends with focus on quality, production, sanitation, cost controls, and presentation.
• Proficiency with computers including MS Office.
• Willingness to participate in client satisfaction programs.
• ServSafe certification is highly desirable.

Responsabilités

• Plans regular and modified menus according to guidelines.
• Follows standardized recipes and completes daily production worksheets.
• Trains kitchen staff in food preparation, safety and sanitation.
• Establishes and maintains cleaning and maintenance schedules for equipment and work areas.
• Maintains inventory of food and supplies within guidelines.
• Decides how leftover food is utilized within company guidelines.
• Complies with health and sanitation regulations and audits.
• Follows safety policies and participates in departmental meetings.
• Engages in professional development and program activities.
