Job summary

Spotlight 29 Casino seeks an Executive Chef to direct all culinary operations, ensuring exceptional food quality and consistent menu execution across restaurants, banquets and events. You will lead teams, manage costs, and uphold sanitation standards while driving innovation and guest satisfaction.

The role requires extensive culinary leadership, experience in high-volume environments, and strong knowledge of safety, HACCP, and budgeting.

Qualifications

• Culinary degree or apprenticeship preferred; leadership experience valued.
• At least 10 years of progressive culinary experience with executive-level roles.
• Casino, resort, tribal gaming or large events experience preferred.
• Strong knowledge of food safety, sanitation, HACCP, temperature controls and costing.

Responsibilities

• Direct daily operation of all kitchens and food production areas.
• Maintain food quality, portion control and timely service across outlets.
• Develop menus and recipe cards with cost, yield and plating details.
• Lead budgeting, forecasting, and inventory controls.
• Ensure compliance with safety, sanitation and internal controls.
