Qualifications

• Fluent English; ability to train staff in English, with bilingual (Spanish) pay differential available.
• Mastery of the Baker I, II, III, and Assistant Production Manager job descriptions.
• Estimate food costs and profits; adjust and manage staff to achieve cost and profit goals.
• Control costs by reviewing portion control and preparation quantities; minimize waste; ensure high quality of preparation.
• Maintain a safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures; complying with regulations.
• Maintain ambiance by controlling lighting, background music, linen service, glassware, and utensil quality and placement.

Responsibilities

• Open availability and reliable transportation.
• Achieve restaurant HR objectives: recruiting, selecting, orienting, training, scheduling, coaching, and disciplining staff.
• Accurately tabulate payroll for all back‑of‑house staff and deliver it to the Store Manager or General Manager.
• Maximize restaurant profitability by ensuring portion control and monitoring accuracy of charges.
• Perform other duties as assigned by the Store Manager, Director of Company Operations, or Area Manager.
