Job summary

Metz Culinary Management is seeking an experienced Food Service Manager to serve as the Assistant General Manager of Dining Services. This role requires a solid background in contract dining services in institutional settings such as hospitals, universities, or schools.

The Assistant GM will oversee food service operations, front and back of house, cycle menus, purchasing, scheduling, payroll, client relations, sanitation, and overall operation results. The GM may be absent at times.

Qualifications

• Front and back of house management experience in contract dining services.
• Food service production and service oversight.
• Staff management, scheduling, and payroll.
• Direct sanitation and safety oversight.
• Budget management and inventory control.

Responsibilities

• Oversee purchasing, scheduling, bookkeeping and client relations.
• Direct food preparation service and sanitation in all dining operations.
• Lead front- and back-of-house teams and train supervisors.
• Maintain overall operation results and act as GM in the GM's absence.
