• Follow dining policy and procedures; ensure department compliance.
• Purchase dining food and nonfood items; ensure 95% DSSI ordering compliance.
• Balance and maintain budgets for raw food and supplies.
• Use standard recipes for food production.
• Ensure proper food safety temperatures and portions.
• Accommodate residents’ prescribed diets when applicable.
• Drive high resident satisfaction through hospitality and service.
• Develop and implement operating and sanitation procedures.
• Conduct pre-meal dining stand‑ups with service staff.
• Adhere to health department regulations; act as dietary representative as needed.
• Ensure dining areas are clean and compliant with audits.
• Interview, train, hire, discipline, and manage dining staff.
• Oversee scheduling of dining staff to meet labor budgets.
