Job summary

Vicious Biscuit is hiring a Kitchen Manager to lead the back of house on day shifts only. You will open and close the kitchen, supervise the line through peak, and ensure recipes, ticket times, and food safety standards are met.

You will train, coach, and manage multiple BOH stations, drive biscuit prep and ordering, and monitor labor and cost. This is a full-time role with growth opportunities as the brand expands.

Qualifications

• 2+ years of line cook experience with at least 1 year leading a shift or station.
• Ability to work every BOH station and run point during peak.
• ServSafe Food Manager certification or willing to earn within 30 days of hire.
• Comfortable with basic math for prep lists, pars, orders and cash counts.
• Available for opening shifts as early as 5:30 AM, plus weekends.
• Must be at least 18 years old.
• Able to stand and walk ~10 hours and lift up to 50 lbs.
• Comfortable around open flames, fryers, flat tops and hot surfaces.

Responsibilities

• Open and close the kitchen with checklists, food safety checks and deposit handling.
• Lead pre-shift Alley Rally, build line-up and run point through peak.
• Work and coach every station — biscuit boards, sauté, flat, fry/waffle, point and dish.
• Make biscuits and run prep to recipe and daily biscuit list.
• Place daily orders, receive deliveries, count inventory and manage costs.
• Review labor against projections and flag overtime.
• Train team members and assist BOH interviews.
• Complete QA self-audits and present BOH needs to GM.
