Job description

Publican Quality Meats - Retail Butcher

Publican Quality Meats is seeking a Retail Butcher to join our team of industry veterans. The ideal candidate is passionate about cuisine, attentive to detail, has a strong work ethic, and eager to learn. Essential Duties & Responsibilities
  1. Maintain high quality and consistency in all back-of-house processes.
  2. Lead by example, teaching staff proper techniques and execution.
  3. Develop and maintain relationships with vendors and farmers.
  4. Focus on improving food costs.
  5. Ensure proper product rotation, utilization, and inventory management to minimize waste.
  6. Assist with purchasing and oversee usage of back-of-house supplies.
  7. Resolve guest complaints politely and professionally.
  8. Communicate effectively with BOH managers, supervisors, and FOH managers.
  9. Support other staff members during absences or busy times, including working on the line during slower seasons.
Additional Responsibilities for Upstairs Butcher
  1. Interact with guests and utilize the Point-of-Sale system efficiently.
  2. Maintain quality standards for cured, fresh, deli meats, cheeses, and bread displays.
  3. Proficiently operate equipment such as bread slicers, deli slicers, knives, toasters, stoves, band saws, meat grinders, and other fabricating tools.
  4. Carry products and work in tight quarters with other staff members.
Minimum Qualifications
  • High School Diploma or GED
  • Food Handler Certification
  • Ability to handle stress and work under pressure
  • Commitment to maintaining a clean, safe, and healthy work environment
  • Strong attention to detail and ability to coordinate multiple tasks
  • Ability to work independently with minimal supervision
Physical Demands and Work Environment
  • Flexibility and openness to various job demands
  • Ability to operate all necessary equipment
  • Ability to lift and handle items weighing 0-50 pounds
  • Availability to work varied hours and days as needed
  • Ability to stand for 8-10 hours a day
  • Tolerance of potential allergens including peanuts, eggs, dairy, gluten, soy, seafood, and shellfish
