Canteen Corrections is seeking a Food Service Supervisor to manage kitchen operations at Macomb County Jail. The role includes supervising inmates, ensuring accurate production records, and maintaining sanitation and security throughout the shift.

The position requires strong leadership, knowledge of food safety, and the ability to coordinate menus, inventory, and daily orders while meeting nutritional and contractual standards.

Qualifications

• Knowledge of food safety regulations and sanitation practices.
• Experience working in a correctional facility or similar secure environment is preferred.
• Ability to supervise inmates and coordinate kitchen activities.

Responsibilities

• Review master menu cycles to ensure correct production records and recipes.
• Verify daily menu items are prepped and available for service.
• Monitor line setup, portion sizes, and serving utensils for accuracy.
• Delegate duties to inmates and supervise performance.
• Record temperatures and maintain sanitation and inventory controls.
• Ensure timely service and maintain security of operations.
• Maintain accurate production and inventory records; manage orders daily.
