Responsibilities

• Supervise inmates in food preparation and tray assembly.

• Direct inmates in recipe usage and proper cooking procedures.
• Manage portions and dietary requirements; verify daily counts.
• Maintain security, lock storage areas, and return tools and keys.
• Plan work and sanitation schedules; control inventory and orders.
• Follow HACCP policies and Aramark SOPs for handling and storage.
