Job summary

Access Plus Capital is seeking a Food Services Supervisor to oversee Fresno County Jail meal operations. You will direct shifts, ensure compliant meal production seven days a week, and coordinate with management to maintain safety and efficiency.

The role requires leadership of cooks and support staff, adherence to regulatory standards, and ensuring accurate records and timely service.

Qualifications

• High school diploma or GED.
• College coursework or vocational training in culinary arts, foodservice management, hospitality or supervision preferred.
• At least three years of related high-volume foodservice experience.
• Two years of direct staff supervision preferred.
• Possess and maintain a valid California Food Handler Card within 30 days of employment.
• Food Protection Manager certification preferred.
• County background and facility security clearance required.
• Forklift certification when operation or supervision is assigned.
• High-volume food production, portion control, and sanitation experience.

Responsibilities

• Directly supervises cooks, food production workers, diet and tray-line staff, dishroom or sanitation staff, storeroom staff, drivers and other personnel as assigned.
• Lead shifts, schedule work, provide daily direction and training, verify time records and evaluate performance.
• Ensure meals are prepared, portioned, held, loaded and delivered according to recipes, menus and portions.
• Maintain HACCP controls, safety, sanitation and temperature logs; ensure compliance with regulations.
• Coordinate production and delivery during emergencies to maintain uninterrupted meal service.
• Train staff on food safety, sanitation, recipes, equipment and security procedures.
