Qualifications

• High school diploma or equivalent; technical training in food service operations.
• Four years of experience in food service operations, three in supervisory capacity.
• Knowledge of nutrition and methods of food cost effectiveness.
• Experience in correctional institution food services preferred.
• Valid food handler’s permit required, if required by the state of Texas.
• Must have valid Texas driver’s license with acceptable driving record.

Responsibilities

• Plan, coordinate and supervise the administrative and food service activities of the department.
• Provide staff training, evaluate staff performance and implement changes with deputy warden approval.
• Assist in budget preparation and monitor expenditures.
• Develop and implement new/revised policies affecting food services.
• Provide nutritious, well-proportioned meals in a clean environment.
• Maintain cost control and ensure quantity of food matches menu and meals planned.
• Conduct inspections of food service areas.
• Supervise detainees assigned to food services.
