Job summary

Fresno EOC seeks a Food Services Manager for the Fresno County Jail foodservice contract. The role leads operational, financial, staffing, and compliance functions and serves as the primary liaison with County authorities to ensure safe, nutritious meals daily.

The position oversees menus, nutrition analysis, budgeting, and performance reporting, with duties spanning the full foodservice lifecycle and requiring leadership across multiple shifts and teams.

Qualifications

• High school diploma or GED is required.
• Bachelor's degree in foodservice management, business administration, hospitality, nutrition or related field preferred.
• At least four years of foodservice management experience in correctional facilities is required.

Responsibilities

• Supervise staff, interns and volunteers; recruitment and performance management.
• Serve as liaison to County for notices, billing, invoices and contract administration.
• Coordinate weekly meetings and inspections with County representatives and ensure timely resolution of issues.
• Direct high-volume preparation, portioning, holding, and delivery of meals and staff meals.
• Oversee 28-day cycle menus, recipes, portion specs and nutrition analysis; obtain County approval for substitutions.
• Ensure compliance with Title 15, BSCC, HACCP, USDA programs and related regulations.
• Maintain quality-assurance covering purchasing, receiving, storage, preparation, sanitation and temperature control.
• Develop operating budgets and manage food and labor costs, staffing plans and contract performance.
