Job summary

Princess Cruises and Holland America Line is seeking a Lead Line Cook for a seasonal full-time role at the Holland America Skagway Inn. You will lead high-energy kitchen operations, prep and execute dishes, and ensure top quality with local ingredients wherever possible.

You will monitor safety, guide junior staff, manage prep and inventory, and contribute to a positive, reliable kitchen team in a dynamic cruise environment.

Qualifications

• Alaska Food Handler Card required.
• Must pass a pre-employment background check.
• Minimum age 18 to reside in company housing where available.
• Must be eligible to work in the United States; visa sponsorship is not available.

Responsibilities

• Perform advanced food preparation ensuring high quality, taste and presentation.
• Prepare ingredients and execute dishes during service.
• Oversee kitchen staff to maintain efficiency, consistency and cleanliness.
• Ensure all food leaving the kitchen meets safety, flavor and visual standards.
• Organize and maintain station; assist others to keep service running smoothly.

RESPONSIBILITIES

• Perform a variety of advanced food preparation tasks, ensuring each dish meets high standards of quality, taste, and presentation.
• Routinely prepare and process food items, from prepping ingredients to executing dishes during service.
• Monitor food preparation activities and oversee kitchen staff to maintain efficiency, consistency, and cleanliness.
• Ensure all food leaving the kitchen meets established standards for safety, flavor, and visual appeal.
• Organize and maintain your station and assist others as needed to keep the kitchen running smoothly.
• Support and guide junior kitchen staff, fostering a collaborative and growth-oriented environment.
• Assist with inventory checks, prep lists, and restocking to ensure readiness for each shift.
• Bring reliability, dependability, and a positive attitude to a fast-paced, high-energy kitchen environment.

REQUIREMENTS

• Must be able to obtain an Alaska Food Handler Card.
• Must pass a pre-employment background check.
• Minimum age of 18 years is required to reside in company housing, where available.
• Must be eligible to work in the United States. Holland America-Princess is unable to sponsor or take over sponsorship of employment visas at this time (e.g., H-2B status).

KNOWLEDGE, SKILLS, & ABILITIES

• Ability to lift 50 lbs./23 kg, work around hot kitchen equipment safely, and stand/walk for long periods of time.
• Ability to organize and prioritize work, maintain attention to time constraints, while working in a team or group environment.
• Ability to work in a fast-paced environment with multiple tasks and external influences.
• Ability to work independently with minimal supervision while achieving daily goals.
• Ability to support and comply with company policies, procedures and guidelines including support and comply with company health and safety standards.
• Ability to stand/walk/work on feet for minimum of 8 hours per day.
