Job summary

Colonial Downs Group LLC is seeking a Team Member to prepare food items for guests, adhering to menu specifications and recipes. Compensation is $16.00 per hour. The role requires standing for shifts, lifting up to 50 pounds, and working nights, weekends, and holidays in a fast-paced kitchen.

Responsibilities include hot/cold prep, maintaining sanitation, and coordinating with front-of-house to meet guest needs and dietary restrictions. Serv-Safe and racing license are required.

Qualifications

• Must obtain and maintain Serv-Safe certificate.
• Must obtain and maintain a valid racing license.
• Experience in a kitchen environment preferred, within a licensed gaming setting.

Responsibilities

• Provides medium complexity hot and cold food preparation, including accompaniments and garnishes in accordance to established recipes and guidelines.
• Maintains knowledge of advanced food preparation and handling techniques.
• Maintains knowledge of all kitchen equipment operations, including tear down, cleaning, and maintenance.
• Maintains knowledge of safety and sanitation rules and practices.
• Prepares appetizers, entrees, salads, and desserts following provided recipes for restaurant, bar, and special functions.
• Prepare and execute menu items for the restaurant in a timely manner.
• Follows recipes, portion controls, and presentation specifications.
• Visually inspects all food sent from kitchen and ensures plates are clean and appetizing.
• Completes food temperature checks daily.
• Tastes all food items prepared for quality assurance.
• Completes preparation records and stores food items properly at close of meal service.
• Follows all safety and sanitation rules and practices.
• Maintain clean, safe, and sanitary work areas, follow all food safety standards.
• Work with front of the house to meet pacing and special guest requests (including allergies and intolerances)
• Ensures all food preparation and assembling is done in accordance with established procedures and recipes.
• Demonstrates knowledge of fire and departmental safety procedures.
