Summary
The Cook is responsible for providing excellent customer service to all patients and guests, maintaining a kitchen environment compliant with state and federal regulations, and delivering quality food with proper presentation. They must be capable of opening and closing the kitchen properly. The role involves overseeing and demonstrating the preparation of hot and cold foods for patients, residents, retail, catering, and special events, ensuring recipe and portion compliance to meet nutritional needs. They monitor food temperature standards and HACCP compliance, and ensure proper inventory handling to minimize waste and optimize the budget.

Responsibilities
- Demonstrate proper hand washing techniques and understand when hand washing is necessary.
- Practice FIFO (First In, First Out) method for inventory management.
- Record all food temperatures accurately using thermocouples and apply time as a control when needed.
- Label, wrap, and date all items appropriately.
- Maintain cleanliness in the kitchen and production areas throughout the shift, ensuring equipment is clean and operational.
- Handle dishware and utensils properly to prevent contamination.
- Use cleaning buckets correctly, ensuring no food residue remains on surfaces.
- Set up the 3-compartment sink correctly, knowing the proper temperatures and sanitizer concentrations.
- Open and prepare the kitchen for the shift.
- Maintain food items in an attractive and fresh manner.
- Follow prescribed diet orders, menu spreadsheets, recipes, and portion sizes.
- Understand and demonstrate different levels of therapeutic diets.
- Manage menu substitutions and use nutritionally equivalent foods.
- Monitor meal portion sizes for nutritional adequacy.
- Provide substitutions or modifications for patients with special dietary needs.
- Ensure a safe work environment and adhere to safety standards.
- Determine preparation and stocking amounts based on data.
- Stay informed of relevant regulations and policies, including HIPAA and TRHS standards.
- Perform tasks suitable for the age-specific needs of patients, staff, and vendors.
- Suggest operational improvements and cost reductions.
- Attend mandatory training and pursue continuing education.
- Maintain competency through exams, skills checklists, and safety requirements.
- Cross-train to assist colleagues and improve efficiency.
- Participate in hospital committees and projects.
- Report equipment issues promptly and ensure proper maintenance.
- Use time efficiently to avoid unnecessary overtime.
Education:
- High School Diploma or GED required.
Experience: Two (2) years of relevant experience preferred.
