FUNCTION
The Cook is responsible for safely preparing food items, following menu specifications and standard recipes.
ORGANIZATIONAL LEVELS
- Cook I - entry-level skilled trade job
- Cook II - proficient in executing all stations on the line, cross-trained to ServSafe certified
- Cook III - proficient in prior levels plus cross-trained to outside Completed Leadership Training class
SPECIFIC DUTIES AND RESPONSIBILITIES COMMON TO ALL LEVELS IN SERIES
- Operate kitchen equipment including slicer, steamer, deep fryer, ovens, broiler, grill, mixer, kettle, etc.
- Read and interpret recipes and perform math calculations for measurements
- Communicate effectively with team members in reading, writing, and speaking
- Maintain cleanliness of kitchen work areas and equipment, including sweeping and mopping
- Participate actively in cooking, preparing, plating, and assembling menu items
- Adhere to food cost control procedures
- Follow all health and safety regulations, including proper hand washing
- Prepare food according to standard recipes and menu specifications to ensure consistency
- Perform other duties as assigned
STANDARDS OF PERFORMANCE
- Handle banquet and food outlet responsibilities effectively
- Maintain constant communication with BOH team
- Foster positive interpersonal working relationships
- Exhibit excellent oral and written communication skills
- Wear black non-slip shoes
- Work efficiently in a fast-paced environment
EDUCATION, TRAINING, AND EXPERIENCE
- High School Diploma or GED
- Minimum of one year experience in food preparation and knowledge preferred
- Ability to work both front and back of house
- Ability to complete necessary classes or certifications
- Ability to obtain a valid Racing License
