Job summary

dnata catering is seeking a Cold Kitchen Assembly team member to meticulously prepare and assemble a variety of cold food items for airline passengers, following standardized recipes and portioning guidelines for consistency and safety.

You will work in a cold environment (35–40°F), adhere to HACCP/GMP standards, manage inventory, and collaborate with the culinary team to ensure timely production and delivery of meals.

Qualifications

• High school diploma or GED preferred.
• At least 1 year of experience in food preparation.
• Flexible schedule including holidays, mornings, evenings, nights, weekends.
• Must meet state/local food handler requirements (Texas reference) within 60 days.

Responsibilities

• Adhere to HACCP/GMP sanitation and food safety policies.
• Read and interpret charts and orders to assemble items.
• Portion and garnish foods into serving dishes, inspecting for contamination.
• Return unused items to storage or dispose of them per procedures with proper dating.
• Retrieve and position salads, desserts, and other cold items for tray assembly.
• Load completed meal trays into airline carts for transport.
• Work in cold environments (35–40°F).
• Perform other duties as assigned.
