Key Responsibilities
  • Supervises production in the butchery station, ensuring quality and consistency by adhering to portion control guidelines, recipes, defrosting schedules, trimming methods, and considering demand, as instructed by the Executive Chef / Chief Butcher.
  • Assists with loading and storing supplies as scheduled.
  • Maintains and makes available the section recipe files for staff.
  • Creates efficient daily production schedules for assigned sections, under the direction of the Chief Butcher.
  • Monitors ingredient consumption and keeps the Chief Butcher informed of production needs.
  • Conducts spot checks to maintain supplies and manage resources effectively.
  • Participates in daily briefings to discuss operations, efficiency, and upcoming events.
  • Supervises butchery staff during operations, as directed by the Executive Chef / Chief Butcher.
  • Controls food consumption through portion and production control to meet cost targets.
  • Trains and coaches staff in production methods, culinary techniques, menu knowledge, and presentation.
  • Monitors equipment condition and reports malfunctions promptly.
Skills, Knowledge & Expertise
  • Formal qualification in Butchery preferred.
  • Minimum 5 years of experience in large butchery operations; cruise ship experience preferred.
  • Experience with different meats and cuts, including seafood processing.
  • Knowledge of USPH/HACCP food safety standards and waste management.
  • Good English skills, verbal and written.
  • Strong guest service foundation and ability to deliver outstanding service.
  • Motivated, personable, and culturally sensitive communicator.
