Job summary

Montage Healdsburg is looking for a Chef de Cuisine who can lead a dynamic culinary team in a luxury hotel setting. You will drive menu development, staffing, and cost controls while delivering exceptional dining experiences for our guests.

Qualifications

• Minimum of three years of culinary supervisory or management experience.
• Excellent verbal and written communication skills.
• Experience with budgeting, cost analysis, and recipe costing is a plus.
• Ability to work a flexible schedule including weekends and holidays.
• Luxury hotel experience preferred.

Responsibilities

• Prepare and order all items for all menus, create order sheets and inventory systems to ensure proper stock levels.
• In conjunction with the Executive Steward, manage inventory, control, and loss reduction of china and equipment for the restaurant(s).
• Assist in maintaining food and labor costs through recipe costing and scheduling standards.
• Execute all production and plating in a timely, efficient manner to meet guest expectations.
• Oversee the daily kitchen operations including recruiting, hiring, training, and supervising sous chefs and cooks.
• Implement cost control measures and revenue strategies to maximize profitability while maintaining service quality.
• Create and maintain staffing schedules with appropriate coverage.
• Oversee menu development with the Executive Chef, culinary innovation, and presentation to meet guest preferences.
• Ensure the department adheres to safety and sanitation policies.
• Deliver WOW moments for guests and take on additional duties as needed.
