Job summary

The Venetian Resort Las Vegas seeks a Manager - Stewarding to lead a 40-50 person team across kitchens, banquets and outlets, ensuring health, safety and union compliance in a high-volume casino resort. You will hire, train, schedule and coach staff, manage daily cleaning checks, and coordinate with Culinary, Banquets, PAD and Engineering to keep operations running smoothly 24/7.

Qualifications

• Three (3) or more years of experience in a Steward role in a high-volume environment.
• At least one year of experience in a stewarding management or supervisory role.
• Ability to work nights, weekends and holidays.
• Familiarity with union environments and CBAs.
• Ability to communicate clearly in English.
• Knowledge of health, kitchen guidelines and OSHA standards.

Responsibilities

• Supervise, direct, and motivate a team of 40-50 Steward I, Steward II, and contract labor team members in accordance with CBAs and company policies.
• Lead the hiring and training process for all new team members and temporary labor to company standards.
• Prepare and manage team schedules based on 10-day forecasts, reallocating resources as needed to meet business demands.
• Provide regular coaching, counseling, and performance management to team members to foster a positive, collaborative environment.
• Manage team member relations, including coaching, counseling, discipline, breaks, and time-off requests.
• Direct and monitor operations across 19-23 steward areas, ensuring daily cleaning checklists are completed.
• Coordinate daily with Culinary, Banquets, PAD, Engineering and other departments for seamless support.
• Organize and manage equipment, chemicals, and supplies, including procurement via Ariba.
• Ensure delivery of chemicals, trash bags, detergents and towels to designated areas and monitor trash collection.
• Oversee monthly deep-cleaning and maintain dishwasher equipment per standards.
• Enforce health code standards and act as contact for health inspections.
• Ensure compliance with union rules (job duties, breaks, scheduling, seniority).
• Draft and train SOPs for safe use of equipment and supplies.
• Address operational challenges while maintaining positive union-management relations.
• Support Banquet events and be flexible for extended hours.
• Serve as point of contact for outside vendors.
• Prepare end-of-shift leadership reports.
• Lead by Venetian culture and service standards.
