Job summary

Aztec Shops Ltd. at San Diego State University seeks a Campus Dining Sous Chef to lead a high-volume campus kitchen, directing lead cooks, cooks, and food service staff. The role includes supervision and kitchen operations, with a focus on production, quality, and customer satisfaction.

You will oversee menu development, ordering, inventory, training, budgeting, and staff scheduling while ensuring compliance with safety, sanitation, and university policies.

Qualifications

• Minimum education: High School Diploma or GED plus at least two years of managerial experience in a commercial kitchen; a culinary degree/certificate is preferred.
• Strong communication and interpersonal skills, computer literacy, and financial/numerical abilities are required.
• Food Handler certificate from San Diego County is preferred.

Responsibilities

• Oversee daily kitchen operations and staff development.
• Assist in hiring, performance evaluation, and scheduling; train and mentor employees.
• Ensure sanitation, safety, and compliance with policies and regulations.
• Develop and implement menu items, monitor costs, and manage inventory and ordering.
• Address customer issues to maintain satisfaction and quality standards.
