Job summary

Greater Omaha Packing Co in Omaha, NE seeks a FSQA Post-Mortem Sorter to identify and mark condemnable conditions before USDA-FSIS inspection. The role requires precision on the harvest floor and close communication with inspection personnel.

You will perform post-mortem sorting, knife work to prepare carcasses, and uphold sanitary standards in a fast-paced production setting. Prior meat-handling experience and strong safety awareness are valued.

Qualifications

• Minimum 1 year experience on a beef harvest floor or FSQA background.
• Harvest floor knife skills and ability to maintain a sharp knife.
• Good communication skills, both verbal and written.
• Willingness to learn bovine anatomy, physiology and pathologies.
• Ability to work in a fast-paced production environment and make sound decisions.
• Basic understanding of food safety, sanitation and QA duties is a plus.

Responsibilities

• Conduct post-mortem sorting on the harvest floor.
• Execute precision knife cuts on the harvest floor for FSIS inspection.
• Apply sound judgment regarding pathology, product presentation, and sanitary standards.
• Other duties as assigned.
