Job Overview

Ensure proper service from the front line through quality control and maintaining sanitation standards.

Responsibilities
  • Check all items against recipe cards, verify use records, and ensure food presentation and quality standards are met.
  • Monitor line setup before all meal functions to ensure efficiency.
  • Maintain equipment and enforce the 'clean as you go' policy.
  • Prepare food following recipes, standards, and portion controls.
  • Start pre-prepared food items, avoiding overproduction.
  • Label, date, and rotate perishables per SOP, maintaining proper temperatures.
  • Check stock levels, determine preparation needs, and set up lines accordingly.
  • Identify shortages or out-of-stock items and assist in stock replenishment.
  • Help keep buffets stocked and return unused food to proper storage with appropriate labeling.
  • Assist in controlling food costs, waste, and usage as per SOP.
Qualifications

Education/Formal Training: High school diploma or equivalent.

Experience: 1-2 years in a related role.

Knowledge/Skills: Ability to work as part of a team, communicate effectively, and knowledge of kitchen practices.

Physical Demands: Ability to lift up to 70 lbs, climb, bend, stand for long periods, and have good hearing and vision. Reasonable accommodations available for disabilities.

Environment: Mostly indoor work, with freezer temperatures at -10°F and front-line temperatures over 100°F.
