Job summary

Pyramid Global Hospitality’s South Seas on Captiva Island, Florida, seeks an experienced Banquet Chef to lead culinary production for banquets, weddings, meetings, and special events. You will oversee production, ensure quality, safety, and presentation, and collaborate with Catering, Conference Services, and F&B leadership.

The role requires 3–5 years in resort/high-volume kitchens, strong leadership, ability to read BEOs, manage inventories, and mentor staff.

Qualifications

• Minimum 3–5 years of professional culinary experience in resort, hotel, banquet, or high-volume F&B.
• Experience leading culinary teams in fast-paced event environments.
• Ability to read and execute banquet event orders, recipes, and production sheets.

Responsibilities

• Lead culinary production for banquets, catered events, weddings, meetings, and special events.
• Plan, organize, and oversee banquet food preparation for quality, consistency, and timely execution.
• Review BEOs, menus, timelines, and guest counts to plan production and staffing.
• Supervise culinary team during banquet prep, production, plating, and service.
• Assist with menu development and cost control across outlets and events.
