Job summary

Easy Foods is seeking a Bakery R&D Scientist to lead new product development for tortilla manufacturing, taking ideas from whiteboard to shelf with bakery expertise in flour handling, fermentation, and formulation. You will collaborate with production, marketing, and QA to refine flavors, textures, and shelf life and to bring breakthrough tortilla products to market.

Experience in tortillas, flatbreads and related baked goods is essential; Spanish language ability is a plus.

Qualifications

• Bachelor’s degree in food science or related field.
• Tortilla, flatbread, snack chip and flour-based baked goods manufacturing experience.

Bakery R&D Scientist - Tortilla Manufacturing EXPERIENCE REQUIRED

Pay: $90,000.00 - $95,000.00 per year

Our fast-growing Tortilla Manufacturing & Snack Facility is on the hunt for a Bakery R&D Scientist to lead the charge on new product development — someone who can take an idea from the whiteboard to the shelf and make taste buds everywhere very, very happy

What You'll Do:

• Develop craveable new tortilla and snack products from concept to launch


• Turning trends into tangible, sellable innovations


• Fine-tune formulations for flavor, texture, shelf life, and scale


• Partner with production, marketing, and QA to bring winners to market


• Push the boundaries of what a tortilla can be

Responsibilities

• You are responsible for interpreting technical data—such as flour COAs and dough rheology (farinograph data)—to optimize production. This includes adjusting mixing times, hydration, and processing settings to maintain consistency, as well as diagnosing and solving production issues like cracking, sticking, or shelf-life problems.


• You must possess deep knowledge of how various ingredients perform within a system, including: Leavening & Preservatives : Managing pH, gas release timing, and shelf-stability mechanisms.


• Emulsifiers, Conditioners & Enzymes : Understanding their impact on gluten development, rollability, and crumb structure.


• Hydrocolloids, Fats & Proteins : Utilizing these for texture control, water retention, and machinability.


• You need to understand how factors like particle size and flour granulation influenced dough hydration and performance. This includes comparing measurement methods (e.g., sieve vs. laser diffraction).


• Beyond simple \"pass/fail\" checks, you are tasked with evaluating ingredient COAs critically, leading technical troubleshooting discussions with vendors, and evaluating alternate ingredient sources based on functional performance rather than just cost.

Required Qualifications

• Bachelor’s degree in food science, Cereal Science, Grain Science, Food Engineering, or a closely related field-or demonstrated equivalent through direct production and formulation experience


• Tortilla, flatbread, snack chip and flour-based baked goods manufacturing experience

Preferred Qualifications

• Experience with Trace Gains or a similar supplier compliance and specification management platform


• Working knowledge of SAP Business One or comparable ERP system


• SQF Practitioner certification or working knowledge of SQF Code requirements.


• Bilingual English/Spanish
