Job summary

MGM Resorts International is seeking an Assistant Manager for Gymkhana at Aria to oversee daily operations and deliver world-class hospitality in a Michelin-recognized setting. You will lead the team, plan shifts, and coordinate with chefs and management to ensure exceptional guest experiences, including handling large parties and special requests.

The ideal candidate will have 2+ years of management experience in upscale dining, strong leadership, and a passion for culture-rich hospitality.

Qualifications

• Must have at least a high school diploma or equivalent.
• 2+ years of management experience in a fine-dining, luxury, or similar upscale restaurant preferred.

Responsibilities

• Make daily floor plans per shift to ensure proper rotation and coverage of stations.
• Supervise floor service in dining rooms during hours of operation.
• Perform employee evaluations and manage attendance issues.
• Maintain communication with the Chef on food service and menu issues.
• Coordinate with management, chefs and culinary staff to address guest and staff needs.
• Order supplies through the IP System and Purchasing; prepare purchase requisitions.
• Keep inventory forms and stocking area updated.
• Inspect food quality and freshness from support departments.
• Communicate with guests for special requests and large party reservations.

THE JOB:

As an Assistant Manager for Gymkhana at Aria , you will oversee the daily operations of our newly Michelin-recognized restaurant, setting a spectacular stage to showcase the rich, bold flavors of our elite Indian cuisine. By understanding our guests’ unique stories and needs, you will lead our team in delivering world-class hospitality, owning the guest journey to create exquisite, culture-rich WOW memories that they will carry with them far beyond their stay.

THE DAY-TO-DAY:

• Make daily floor plans per shift to ensure proper rotation and coverage of stations
• Supervise floor service in dining rooms during hours of operation
• Perform employee evaluations and manage issues related to attendance records
• Maintain communication with the Chef on all food service and menu issues
• Communicate with management, chefs and culinary staff in order to fulfill and address issues or needs requested by guestsand employees
• Order supplies through the IP System and Purchasing; prepare purchase requisitions for any outlets from the warehouse orsupport departments
• Keep inventory form and stocking area updated
• Inspect food coming from support departments to assure freshness and quality
• Maintain direct communication with guests for special requests and large party reservations

THE IDEAL CANDIDATE:

• High School Diploma, GED or equivalent required
• Bachelor's Degree or equivalent experience preferred
• Work varied shifts, to include weekends and holidays required
• Must be 21 years of age or older
• 2+ Years of prior relevant experience required
• Previous relevant Management experience in a fine-dining, luxury, or similar Upscale restaurant preferred
• Previous experience managing employees under a collective bargaining agreement preferred
