Overview

OPPORTUNITY: AM Sous Chef

Join the Kitchen Management team as an AM Sous Chef, leading culinary operations and dish conceptions to provide an elevated guest experience that evokes a sense of place. Key responsibilities include supervising kitchen staff for efficiency and quality, keeping menus up-to-date with culinary trends, documenting recipes and procedures, and being in charge of the kitchen in the absence of the Executive Chef or during special events.

Potential Career Path:

Chef de Cuisine – Executive Chef

Essential Job Functions:

  • Coordinate menu tastings with the Executive Chef and culinary team.
  • Update recipes and dish guides to ensure consistency.
  • Develop pairings and off-menu items when appropriate.
  • Assist in managing banquet services, ensuring proper preparation and staff training.
  • Oversee food preparation for all meal periods, employee meals, and events, maintaining quality standards.
  • Support purchasing activities, including maintaining pars and monitoring pricing.
  • Ensure storage areas are organized and stock levels are maintained.
  • Follow procedures for kitchen opening and closing.
  • Assist in training, scheduling, supervising, and reviewing kitchen staff, promoting morale and productivity.
  • Ensure compliance with safety and sanitation standards, report hazards, and practice safe work habits.

Essential Skills & Requirements:

  • Effective communication skills, both verbal and written.
  • Basic computer skills, including Microsoft Office.
  • Decision-making skills related to profitability, service, and safety.
  • Strong leadership and coaching abilities.
  • Flexible work schedule with a professional appearance.
  • Self-motivated, organized, detail-oriented, and composed.
  • High school diploma required; college or culinary training preferred.
  • Minimum of 2 years of managerial kitchen experience.
  • Valid CA Food Handler Card (or ability to obtain within 30 days).
  • Valid driver’s license with a clean record.
  • Ability to work weekends and holidays.
  • Physical ability to stand, walk, lift up to 50 lbs, and work in varying temperatures.
